"Oyster Mushrooms"  Oyster mushrooms comprise a long list of different species and are available in an amazing array of colors and sizes. They have a texture much like their seafood namesake, with a mild taste and pleasant odor.

Oyster mushrooms are one of the most popular mushrooms in the genus Pleurotus (gilled mushrooms). They are usually light to dark creamy grey in color, although there are also a wide variety of colors including yellow, pink, white and blue. Their broad, oyster-shaped cap and off-centered stipe allows the mushroom to attach laterally to its growth medium. They are famous for their resemblance to Oysters and hence its name.
